Giardiniera di verdure / Pickled vegetables

La giardiniera è un metodo molto antico di conservazione delle verdure, in special modo per poter essere consumate durante l'inverno. Spezzettate, lessate in acqua e aceto, vengono utilizzate come contorni, ingredienti di piatti e guarnizioni.
Gli ortaggi, una volta terminata la cottura, devono essere scolati e messi in vasi di vetro ermetici, per poi venir ricoperti, dopo 24 ore, da una miscela di aceto e olio bolliti insieme. I vasi, successivamente, dovranno essere riposti in un luogo fresco e buio. Si conserva per circa un anno e può essere consumata dopo almeno un mese dal confezionamento.
Esistono varie versioni della giardiniera, questa che vi proponiamo è quella di casa nostra.



Ingredienti:


2 zucchine piccole
2 carote novelle
2 coste di sedano
200 g di fagiolini
1 peperone rosso
1 peperone giallo
1/2 l di acqua
1/4 l di aceto di vino bianco
sale quanto basta
olio extravergine d'oliva

Pulire e lavare le verdure, tagliarle a cubetti.
In una pentola far bollire l'acqua e l'aceto ed il sale, unire le verdure e scottatele per due minuti. Scolare e far raffreddare su di un piano di marmo.
Condire le verdure con l'olio.

 Pickled vegetables


The pickled vegetables is a very old method of preservation of the vegetables, especially in order to be consumed during the winter. Chopped, boiled in water and vinegar, they are used as side dishes, ingredients of dishes and garnish.
The vegetables, once cooking is complete, must be drained and placed in hermetic glass jars, then they being covered, after 24 hours, with a mixture of vinegar and oil boiled together. The vessels, then, should be placed in a cool and dark place. It will keep for about a year and can be consumed after at least one month from the packaging.
There are several versions of the pickled vegetables, we suggest that this is our home.

Ingredients:


2 small zucchini
2 new carrots
2 stalks celery
200 g of green beans
1 red pepper
1 yellow pepper
1/2 l of water
1/4 l of white wine vinegar
salt to taste
extra virgin olive oil

Clean and wash the vegetables, then cut them into cubes.
In a saucepan, let boil the water with the vinegar and the salt. Add the vegetables and scald them for about 2 minutes. Drain them and let cool on a marble slab.
Season the vegetables with oil.
