Coniglio al cannonau ed erbette fresche / Rabbit at the Cannonau and fresh herbs

Un piatto che riesce ad esaltare, grazie al Cannonau Brennas della Cantina "Colline del Vento" di Villasimius, il tenero della carne di coniglio avvolgendolo con gentilezza, togliendo quel caratteristico sapore di selvatico, e che accompagnato dall'essenze fresche rende la pietanza appetibile ad ogni palato.
Una ricetta che consiglio di realizzare in questa stagione di primavera sfruttando le erbette fresche con le loro infiorescenze.

Ingredienti per 4/6 persone:


un coniglio da 1 kg
200 g di pancetta tesa
2 bicchieri di Cannonau Brennas "Colline del Vento"
un’abbondante mazzetto di odori misti freschi: prezzemolo, rosmarino, salvia, timo
2 spicchi d’aglio
2 cucchiai d’olio extra vergine d’oliva
2/3 bicchieri di brodo di carne
sale e pepe quanto basta

Tagliare a tocchetti il coniglio, lavarlo ed asciugarlo. Disporre la carne in una ciottola, condire con sale e pepe, tritare finemente uno spicchio d’aglio e le erbette, e aggiungerle alla carne. Mescolare bene in modo tale che ogni pezzo si avvolga degli odori. Avvolgere ogni tocchetto con una fetta di pancetta. In una capiente padella scaldare l’olio con lo spicchio d’aglio in camicia. Disporre la carne in un unico strato, e far rosolare da tutti i lati. Aggiungere il vino Cannonau Brennas "Colline del Vento", far sfumare e coprire. Quando il vino si sarà ridotto aggiungere il brodo coprire e terminare la cottura per altri 35/40 minuti.
Servire caldo.

Rabbit at the Cannonau and fresh herbs

  
A dish that manages to bring out, thanks to Cannonau Brennas by Cantina "Colline del Vento" of Villasimius, the tender of rabbit meat by wrapping it with kindness, removing the characteristic flavor of wild, and that accompanied of the fresh of essense makes it attractive to every palate.
I recommend to make this recipe in the season of spring taking advantage of the fresh herbs with their inflorescences.

Ingredients for about 4/6 people:


a rabbit of 1 kg
200 g of bacon
2 glasses of Cannonau Brennas "Colline del Vento"
a generous bunch of mixed fresh herbs: parsley, rosemary, sage, thyme
2 cloves of garlic
2 tablespoonfuls of extra virgin olive oil
2/3 cups beef broth
salt and pepper to taste

Cut the rabbit into pieces, wash and dry it. 
Place the meat in a bowl, season with salt and pepper, finely chop a clove of garlic and the herbs, and add to the meat. Stir well so that each piece is mixed with the odors. Wrap each piece with a slice of bacon. In a large pan heat the oil with the unpeeled garlic clove. 
Place the meat in a single layer, and let brown on all sides. Add the wine Cannonau Brennas "Colline del Vento", let evaporate and cover. When the wine is reduced add the broth to cover and finish cooking for another 35/40 minutes.
Serve hot.
