Pistoccheddus de Serrenti

I dolci sardi hanno una particolarità: sani e semplici negli ingredienti ma molto difficili e tecnici nella preparazione. E questi biscotti ne sono un esempio. Il loro nome deriva appunto da Serrenti, un comune nel Medio Campidano. Molti apprezzano gustare questi biscotti inzuppandoli in un buon Moscato o Nasco.

Ingredienti per circa 22 pezzi:

5 uova
450 g di farina
200 g di zucchero
4 cucchiai di limone
la scorsa grattugiata di 1/2 limone
un pizzico di sale
1/2 noce di strutto
una bustina di vanillina (0,5 g)
piccole palline argentate per decorare

Preriscaldare il forno a 180°C. Su una superficie pulita, setacciare la farina e fare una fontana. Aggiungere 3 uova intere e 2 tuorli (tenendo da parte i due albumi), un pizzico di sale, la vanillina, la buccia grattugiata e il succo del limone. Lavorare molto bene l’impasto per almeno 20 minuti. Poi ungere l’impasto con lo strutto morbido e continuare a lavorarlo facendo in modo che non inizi la lievitazione.
Quando l’impasto è ben sodo, spianarlo con un mattarello e creare i biscotti secondo la vostra fantasia, poi trasferirli su una teglia rivestita con carta da forno.
  Infornare e cuocere per circa 25-30 minuti, o fino a quando i biscotti saranno di colore giallo pallido. Poi, trasferire i biscotti su una rastrelliera per raffreddarsi completamente.
Per ottenere la cappa per i biscotti, in una terrina montare a neve gli albumi con lo zucchero. Poi scaldare a bagnomaria la cappa, spalmarla sulla superficie dei biscotti e decorarli con le palline argentate. Dopodiché rimettere i biscotti in forno, a una temperatura di 50°C fin quando la cappa non si sarà essiccata.

The Sardinian desserts have a special feature: simple and healthy ingredients but very difficult and technical preparation. And these cookies are an example. Their name derives from Serrenti, a municipality in the Middle Campidano. Many people enjoy these cookies dunking them in a good Moscato or Nasco.

 

Ingredients for about 22 pieces:


5 eggs
450 g of flour
200 g of sugar
4 tablespoonfuls of juice of lemon
grated rind of 1/2 lemon
a pinch of salt
a 1/2 knob of lard
0,5 g of vanillin
small silver balls for decorate

 Preheat the oven to 180°C. On a clean surface, sift the flour and to make a well. Add 3 eggs and 2 yolks (reserving the 2 egg whites for the icing), a pinch of salt, vanillin, juice and grated lemon rind.
Knead with hands very well the dough for about 20 minutes. Then grease the dough with the smooth lard and continue to knead and making sure that it doesn’t start the rising.
When the dough is well hard, roll out it with the rolling pin and create the cookies according your imagination, then transfer them to a baking tray lined with non-stick baking parchment.
Bake for about 25-30 minutes, or until the cookies are pale yellow color. Then transfer the cookies to a wire rack to cool completely.
For the icing, in a bowl whip the egg whites with the sugar. Heat in a bain marie the icing, brush it in the surface of cookies and decorate it with the small silver balls. After putting back the cookies in the oven at 50° C, until the icing will be dry.
