Arrosu cun seppia / Risotto with cuttlefishes

E' il periodo giusto per acquistare le seppie, quindi perchè non approfitarne ora per fare questo splendido e gustoso risotto?!


Ingredienti per circa 6 persone:

500 g di riso Carnaroli o Arborio
800 g di seppie
5 cucchiai di olio extra vergine d’oliva
un mestolo di polpa di pomodoro
uno spicchio d’aglio
una cipolla novella
un ciuffo di prezzemolo
zafferano
brodo di pesce
sale e pepe quanto basta

Pulire e lavare bene le seppie e e poi tagliarle a strisce sottili.
In un tegame far soffriggere con l’olio un trito di cipolla, aglio e prezzemolo. Dopo la rosolatura, aggiungere le seppie e continuare la cottura fin quando sarà evaporato il loro liquido. Aggiungere il riso e farlo rosolare. Regolare di sale e pepe. Poi aggiungere la polpa di pomodoro e mescolare. Versare di tanto in tanto alcuni mestoli di brodo, in cui avrete fatto sciogliere lo zafferano, e continuare a mescolare fino all’ultimazione della cottura.
Servire caldo.

Ingredients for about 6 people:


500 g of rise type Carnaroli or Arborio

800 g of cuttlefishes

5 tablespoonfuls of extra virgin olive oil

a ladle of tomato pulp

a clove of garlic

a novel onion

a bunch of parsley

saffron

stock of

salt and pepper to taste

Clean and wash well the cuttlefishes and then cut them into striped.
In a pan let fry lightly with the oil a chopped of onion, garlic and parsley. After the browning, add the cuttlefishes and continue the cooking until when will be evaporate their runny. Add the rise and let brown. Regulate the salt and pepper. Then add the tomato pulp and stir.
Every so often pour some fish stock, in the which has been dissolved the saffron, and continue to stir until complete cooking.
Serve hot.
