Pisci a scabecciu

E’ un piatto antico e di stagione. Veniva preparato la domenica e nei giorni di festa. Normalmente vengono utilizzate anche le anguille, ma volendo si può variare utilizzando altri pesci da frittura.

Ingredienti per circa 6 persone:


4 muggini
4 merluzzi
olio extra vergine d’oliva
una cipolla
farina e semola fine  quanto basta ma nella stessa misura
2 spicchi d’aglio
un mazzetto di prezzemolo
2/3 cucchiai di pangrattato
una tazza di vino bianco
una tazza di aceto bianco
una foglia d’alloro
sale e pepe quanto basta

Pulire, lavare e asciugare con cura i pesci. Miscelare la farina con la semola fine e con questa infarinare i pesci. Friggerli poi in un tegame con abbondante olio caldo finché saranno dorati. Asciugarli dall’unto della frittura e metterli in un piatto da portata.
Per la salsa, fate rosolare in un tegame la cipolla, aggiungete poi il prezzemolo e l’aglio tritati, il pangrattato, l’alloro, il sale e il pepe. Mescolate bene, aggiungete l’aceto e il vino bianco e fate evaporare.
Quando la salsa sarà densa versarla sul pesce fritto e far raffreddare il tutto in un luogo fresco.
Questo piatto si gusta dopo un paio d’ore o meglio ancora il giorno dopo.

It's an ancient dish and season. It was prepared on Sundays and feast days. Normally are used also the eels, but if you want you can change using other fishes by fried.

Ingredients for about 6 people:


4 muggini
4 cods
extra virgin olive oil
an onion
flour and durum wheat to taste but in the same measure
2 cloves of garlic
a little bunch of parsley
2/3 tablespoonfuls of breadcrumbs
a cup of wild wine
a cup of wild vinegar
a bay leaf
salt and pepper to taste

Clean, wash and carefully dry the fishes. Mix the flour with the durum wheat and with this mixture pass the fishes. Heat the oil in a big pan and so let brown the fishes until at the browning. Dry the greasy of fried food and put them in the serving dish.
For the sauce, let brown the onion in a pan, then add the chopped of parsley and garlic, the breadcrumbs, the bay leaf, the salt and pepper. Stir well, add the vinegar and white wine and let evaporate.
When the sauce will be dense pour it on the fried fishes and let it to cool in the cool place.
Serve this dish after at least two hours of preparation or still better the day after.
