Cakes of Saint Biagio

Ingredients for about 6 people:

600 g of superfine flour (fior di farina di grano duro)
80 g of lard
4 eggs
a pinch of salt
extra virgin olive oil
150 g of sugar
100 g of honey
grated rind of one lemon
12 drops of orange blossom water


On a clean surface, sift the flour and to make a well. Add eggs, lard and a pinch of salt. Knead well with hands until when the dough become homogeneous and smooth.

Obtaining of thin rollers, then cut them into chunks long about a centimetre and a half.
Sprinkle the chunks with some flour, in this way don’t stick between themselves.
Fry the chunks over moderate heat in hot oil, until them are golden brown. After which carefully dry the greasy of fried food.
In a pan add the sugar, the honey, the grated rind of lemon and the water of orange blossom water. Let melt at low heat, then add the chunks previously fried and carefully stir.
When the sugar will be melted and the honey will start to spin, seize with moistened hands some cakes and make  of species of pine cones with these.
Let cool them and serve.
