The soup of fishes at Cagliaritana

Ingredients for about 8 people:

1 Kg of mix of fishes for soup
some seafood
a octopus (little)
2 cuttlefishes (little)
a bunch of parsley
4 tablespoonfuls of extra virgin olive oil
about 2 litre of water
a medium onion
4 sun dried tomatoes
2 tablespoonfuls of tomato purée
a dry red chilli pepper
salt to taste
some slices of homemade bread


In a big pan, let fry lightly the oil with a chopped of onion, parsley, sun dried tomatoes. Add the tomato purée and let cook for about some minutes.
Then, add the water, the salt, the chilli pepper and bring to the boil.
Add the octopus and the cuttlefishes at the soup. After 15 minutes add the fishes, beginning to those more big.
At cooking almost complete of the fishes, add the seafood.
Let cook still for some minutes.
Before serve the soup, cut the octopus and the cuttlefishes into pieces.
Serve it hot, into soup plates, on a bed of toasted croutons of homemade bread (or fry the croutons with the oil flavored at garlic).
