Sweet and sour aubergines

Ingredients for 6 people:

600 g of aubergines
350 g of tomatoes (or tomato pulp)
3/4 tablespoonfuls of vinegar
a tablespoonful of sugar
an onion
a clove of garlic
a sprig of parsley
3 leaflets of basil fresh
a decilitre of extra virgin olive oil
salt and pepper to taste

Cut the extremity of aubergines, slice them and put them on an inclined surface,
and sprinkle with plentiful salt for let strain the slightly bitter liquid.
After 30 minutes, drain, dry thoroughly and let fry them in hot oil. Dry the greasy of fried food and put them on a serving dish, keeping warm.
Apart from chop the onion, garlic, parsley and fry lightly in the oil previously used for the fried. After the browning add the tomato pulp. Let condense the sauce and then add the vinegar too.
Add the sugar and let dry a little the sauce.
In the end add the chopped basil, stir and pour hot it on the fried aubergines.
Serve the food on the table.
