Fried cutlets of lamb

Ingredients for 6 people:

9 cutlets of milk lamb meat
a bowl of breadcrumbs
a sprig of parsley
a clove of garlic
3 eggs
65 g of mature Pecorino cheese (“Fiore Sardo”)
a decilitre of extra virgin olive oil
salt and pepper to taste


Beat slightly the cutlets so that make them uniform. Beat the eggs with a pinch of
salt and pass the cutlets into it.
Chop thinly the parsley and garlic. Mix the breadcrumbs with grated Pecorino cheese and the chopped of parsley and garlic. In this mixture pass the cutlets.
Heat the oil in a pan and so let brown the meat until at the browning.
  Add a little of salt and a pinch of ground pepper.
Serve hot the cutlets.
