Bavarese alla vaniglia / Bavarian cream at the vanilla

I dolci al cucchiaio rappresentano i desserts a cui è difficile riuscire a resistere. La sontuosità, la compatta cremosità e la morbidezza, sono l'ideale per un fine pasto sensuale ed appagante.

Ve ne sono di vari tipi, dalle forme e consistenze diverse fra loro, ma la maggior parte ha come punto in comune una crema di tuorli e zucchero, spesso cotta nel latte, e i diversi ingredienti che ne regalano la particolarità aromatica e cromatica.

Quella di oggi è una delicata, vellutata, profumata Bavarese alla vaniglia. Semplicissima negli ingredienti ma avvolgente nel gusto.

Ingredienti:


500 ml di panna
500 ml di latte
150 g di zucchero
4 fogli di colla di pesce
3 tuorli
una stecca di vaniglia

In un pentolino mettere il latte e la stecca di vaniglia, far bollire, togliere dal fuoco e lasciar raffreddare.
In una ciotola montare i tuorli con lo zucchero finché non saranno bianchi e spumosi. Diluire il latte con la crema dopo aver tolto la stecca di vaniglia (tenere da parte anche 4 cucchiai di latte), mescolando affinché non si formino dei grumi. Mettete il composto sul fuoco e mescolare in continuazione per 10 minuti senza portarlo ad ebollizione. Dopodiché toglierlo dal fuoco e far raffreddare.
Mettere a bagno la colla di pesce in una ciotolina con dell’acqua fredda per circa 10 minuti. Strizzarli bene, metterli in un piccolo pentolino con i 4 cucchiai di latte messi da parte precedentemente, e farli sciogliere a fuoco dolce mescolando delicatamente.
Aggiungerli alla crema amalgamando bene. Versare il composto freddo in una ciotola e porlo in frigorifero fino a quando inizierà a rapprendersi.
Incorporare la panna montata al composto mescolando delicatamente dal basso verso l’alto. Inumidite uno stampo da budino e versare il composto, tenerlo in frigorifero per almeno 4 ore.
Prima di servire, rovesciare la bavarese su un piatto da portata e decorarla a piacere (nella foto con fiocchi di panna montata con menta fresca).

Bavarian cream at the vanilla


The dolci al cucchiaio are the desserts that is hard to resist. The sumptuousness, the compact creaminess and softness are ideal for a late meal sensual and satisfying.

There are various types, different for consistencies and shapes, but most of them have in common a cream egg yolks and sugar, often cooked in milk, and other ingredients that give at them both the aroma and the chromatic particularity.

That's of today is a delicate, creamy, fragrant Bavarian cream at the vanilla. Simple in its ingredients but of the enveloping taste.

Ingredients:


500 ml of cream
500 ml of milk
150 g of sugar
4 sheets of gelatin
3 egg yolks
a vanilla pod

 Boil the milk and the vanilla bean in a saucepan, remove from heat and allow to cool.
Beat the egg yolks with the sugar in a bowl until they are white and fluffy.
Remove the vanilla bean, set aside 4 tablespoonfuls milk, dilute the milk with the eggs, stirring so that no lumps. Put the mixture on the stove and stir continuously for 10 minutes without bringing to a boil. Then remove from heat and let cool.

Soak the gelatin with cold water in a little bowl for about 10 minutes. Squeeze well, place them in a small saucepan with 4 tablespoonfuls of milk set aside earlier, let melt them over low heat stirring gently.
Add the gelatin at the mixture and mixing well. Pour the cold mixture in a bowl and place in refrigerator until it begins to thicken.

Add the whipped cream into the mixture, stirring gently from bottom to top. Wet a pudding mold and pour the mixture, keep it in the refrigerator for at least 4 hours.
Before serving, overthrow the Bavarian cream on a serving dish and decorate it as you wish (pictured with bows of whipped cream with fresh mint).
