Polpette di riso e merluzzo / Rissoles with rice and cod

Semplice piatto casalingo, adatto sia come antipasto che come primo. Accompagnato da una fresca insalata, come “L’insalata di Ajò a Pappai!!!”, diventa un ottimo piatto unico da gustare durante i pranzi fuori porta. Da provare!!

Ingredienti per circa 4 persone:


300 g di riso carnise i Chicchi d’Angelo iFerrari
500 g di merluzzo fresco
2 pomodori secchi
un mazzetto di prezzemolo
un cipollotto fresco
50 g di parmigiano grattugiato
2 uova
una puntina d’aglio
pane grattugiato
olio extravergine d’oliva
2 l d’acqua
sale e pepe quanto basta

Per il brodo:

In una pentola far bollire, per circa 10 minuti, l’acqua, il cipollotto, i pomodori secchi, il prezzemolo, un cucchiaio d’olio, e regolare di sale. Aggiungere il merluzzo, precedentemente pulito e lavato, e farlo cuocere. A cottura ultimata scolare il pesce e filtrare il brodo.

Per le polpette:

In un tegame far tostare il riso carnise i Chicchi d’Angelo iFerrari con due cucchiai d’olio e cuocerlo per circa 18 minuti, aggiungendo man mano il brodo di merluzzo. A cottura ultimata tenerlo da parte per farlo raffreddare. Nel frattempo spinare il pesce e schiacciarlo con una forchetta. In una terrina mettere insieme il risotto, il merluzzo, un trito d’aglio e prezzemolo, il parmigiano, il pepe e un uovo. Amalgamare bene il composto, e formate delle polpette. Passarle nell’uovo sbattuto e successivamente nel pane grattugiato. Friggerle poi in un tegame con olio caldo fin quando saranno dorate.
Asciugare dall’unto della frittura e servire calde.

Rissoles with rice and cod


Simple homemade dish, suitable both as an appetizer and as a first course. Accompanied by a fresh salad, such as "The Ajò a Pappai's salad!!!", it becomes a great dish to enjoy during a lunch outside the door. Try it!

Ingredients for about 4 people:


300 g rice carnise by i Chicchi d’Angelo iFerrari
500 g of fresh cod 
2 sun-dried tomatoes 
a bunch of parsley 
a fresh little onion 
50 g of grated parmigiano cheese 
2 eggs 
a pinch of garlic 
breadcrumbs 
extra virgin olive oil 
2 l of water 
salt and pepper to taste

For the broth: 

In a saucepan, boil for about 10 minutes, the water, the onion, sun-dried tomatoes, parsley, a tablespoonful of extra virgin olive oil, and regulate of salt. Add the cod, previously cleaned and washed, and cook. When cooked, drain the fish and strain the broth. 

For the rissoles: 

In a saucepan, toast the rice carnise by i Chicchi d’Angelo iFerrari with two tablespoonfuls of extra virgin olive oil and cook for about 18 minutes, gradually adding the broth of cod. When cooked, keep it aside for to cool. In the meantime, remove the fish bones it and crush the cod meat with a fork. In a bowl put together the risotto, the cod, chopped garlic and parsley, parmigiano cheese, pepper and an egg. Stir well, and form into balls. Dip them in beaten egg and then in bread crumbs. Then fry them in a pan with hot oil until golden. 
Carefully dry the greasy of fried food and serve hot.
