Sa Trottobia

“Sa trottobia”, ossia la coratella e gli intestini allo spiedo, è uno dei piatti della tradizione più rappresentativi della cucina pastorale sarda. Molto diffuso in tutta l’isola, è un piatto molto elaborato e dal gusto deciso.

Ingredienti per circa 4 persone:


una coratella intera, compresa degli intestini e dell'omento, di un'agnellino o di un capretto
100 g di lardo
sale quanto basta

Pulire accuratamente tutte le interiora. Tagliare a tocchi regolari, cuore, fegato, polmone e infilzarli nello spiedo alternandoli. Coprire con l'omento, assicurandosi di averla ben fissata. A questo punto intrecciare gli intestini fino a coprire tutti i pezzi. 
Mettere lo spiedo nel girarrosto e far asciugare "sa trottobia" lentamente e lontano dal fuoco. Man mano che asciuga, avvicinare lo spiedo e procedere alla cottura vera e propria, ci vorrà circa un'ora. Prima che termini la cottura, salare e lardellare. 
Servire caldissima.

"Sa trottobia", ie the guts and intestines at the spit, is one of the most representative dishes of the traditional cuisine of Sardinia pastoral. Widespread throughout the island, is a dish very elaborate and strong taste.

Ingredients for about 4 people:


a lamb's coratella, including the intestines and the omentum 
100 g of lard 
salt to taste

Thoroughly clean all the guts and the intestines. Cut in regular pieces the heart, liver, lung and thread them on the spit alternating them. Cover with the omentum, making sure it is tight. At this point, weave the intestines to cover all the pieces. 
Put the spit in the rotisserie and let dry "sa trottobia" slowly and away from fire. As it dries, draw near the spit and proceed to the cooking, it will take about an hour. Before the end of cooking, add salt and larding. 
Serve very hot.
