Is coiettas / Meat roulades

(Involtini di carne)

“Is coiettas” sono degli involtini di carne il cui ripieno varia in base alle primizie del momento. Ed è proprio il ripieno, nelle sue varianti, a rappresentare le varie zone dell’Isola.


Ingredienti per 6 persone:

12 fettine di carne di vitellone
circa 150 g di pangrattato
150 g di pecorino stagionato grattugiato
2 spicchi d’aglio
alcune foglie di basilico
vino rosso secco
3 tuorli
olio extra vergine d’oliva
una fetta di lardo di prosciutto
odori vari (mirto, timo, rosmarino, ect. …)
sale e pepe quanto basta

Battere leggermente le fettine con il batticarne, condirle con il sale e gli odori e lasciarle marinare.
In una ciotola mescolare alcune cucchiaiate di pangrattato con un pò di vino, il formaggio grattugiato, il basilico spezzettato con le mani, l’aglio e il lardo tritati, i tuorli sbattuti, e un pizzico di sale e pepe. Lasciate riposare il composto per circa 30 minuti.
Dopodiché prendete le fettine, spalmatevi un pò di composto su ciascuna di esse, arrotolatele e legatele con dello spago da cucina, poi passatele nel pangrattato.
In un ampio tegame, con un pò di olio caldo, mettere gli involtini in un unico strato e farli rosolare a fuoco moderato. Aggiungere poi un pizzico di sale e sfumare con il vino. Far evaporare, e subito dopo coprire e far ultimare la cottura.
Se necessario, per ultimare la cottura degli involtini, aggiungere qualche mestolo di brodo di carne.
Servire caldi.

Meat roulades

 

“Is coiettas” are meat roulades whose stuffing varies according of the first fruits of the moment. It’s the particular stuffing, in its variations, has represent the various areas of the Island.

Ingredients for 6 people:

12 slices of beef meat
about 150 g of breadcrumbs
150 g of grated mature Pecorino cheese
2 clove of garlic
some leaves of basil
dry red wine
3 yolks
extra virgin olive oil
a slice of ham’s lard
various herbs (myrtle, thyme, rosemary, …)
salt and pepper to taste

Lightly beat the slices of beef meat with the meat hammer, season them with the salt and herbs and let marinate.
In a bowl mix some tablespoonfuls of breadcrumbs with some wine, the grated cheese, the basil broke up with hands, the chopped of garlic and lard, the whisked yolks, and a pinch of salt and pepper. Let rest the mixture for about 30 minutes.
After which take the slices of beef meat, spread some mixture into each them, roll and tie them with twine, then pass them into breadcrumbs.
In a big pan, with some hot oil, put the roulades in a only layer and let brown at moderate heat. Then add a pinch of salt and the wine. Let evaporate and immediately after cover and let finish the cooking.
If necessary, for finish the cooking of roulades, add some ladle of beef tea.
Serve hot them.
