Favata

Un piatto della tradizione contadina con uno degli ingredienti più usati nella cucina tradizionale Sarda: le fave. Ma è anche un piatto della tradizione carnevalesca. Questa versione è ricca e gustosa. Tutta da provare!

Ingredienti per circa 6 persone:

600 g di fave secche
400 g di salsiccia fresca
600 g di costine di maiale
4 pomodori secchi
un cucchiaio di concentrato di pomodoro
uno spicchio d’aglio
una cipolla media
5 coste di bieta
una carota
una costa di sedano
4 cucchiai d’olio extra vergine d’oliva
un mazzettino di finocchietto selvatico
sale e pepe quanto basta
alcuni crostini di pane casereccio

Per ammorbidire le fave secche, metterle a bagno in una ciotola d’acqua tiepida con un pizzico di sale sin dalla notte prima. Prima della cottura delle fave, rimuoverne la parte scura della buccia.
Fare un trito di cipolla, aglio, pomodori secchi, carota, sedano. In un tegame far rosolare il trito con l’olio, poi aggiungere la salsiccia e le costine tagliate a tocchi grandi. Dopo che la carne è rosolata aggiungere il concentrato di pomodoro e allungare il tutto con mezzo litro d’acqua. Lasciar cuocere per circa 20 minuti.
Nel frattempo, in una casseruola con 2 litri d’acqua, far cuocere le fave, la bieta tagliata a pezzi di circa 2 centimetri e il finocchietto selvatico. A metà cottura delle fave, unire a queste la carne precedentemente cotta. Regolare di sale e pepe, mescolare bene, e far ultimare la cottura delle fave.
Servire caldo su crostini di pane casereccio abbrustolito.

A plate of country tradition with one of the most widely used ingredients in traditional Sardinian:the broad beans. It's also a plate of carnival tradition. This version is rich and tasty. All to try!

Ingredients for about 6 people:

600 g of dried broad beans
400 g of fresh sausage
600 g of spareribs
4 sun dried tomatoes
one tablespoonful of tomato purée
a clove of garlic
a medium onion
5 ribs of chard
1 carrot
a rib of celery
4 tablespoonfuls of extra virgin olive oil
a little bunch of wild fennel
salt and pepper to taste
some croutons of homemade bread

For soften the dried broad beans, leave them to soak in a bowl of lukewarm water with a pinch of salt since the night before. Before cooking of the broad beans, remove the dark part of skin.
Chop onion, garlic, sun dried tomatoes, carrot and celery. In a pan let brown the chopped with oil, then add the sausage and the spareribs cutting into large chunks. After that the meat is browned, add the tomato purée and half to litre of water. Let cook for about 20 minutes.
In meantime, in a saucepan with 2 litres of water, let cook the broad beans, the chard (cut into pieces of about 2 cm) and wild fennel.
Halfway through cooking, add the meat previously cooked. Regulate the salt and pepper, stir well and let finish the cook of broad beans.
Serve hot on toasted croutons of homemade bread.
