Ingredients for 6 people:
9 Sardinian artichokes with thorns
a big bunch of parsley
2 cloves of garlic
a bowl of breadcrumbs
a decilitre of extra virgin olive oil
salt and pepper to taste
Remove the exterior hard leaves of the artichokes, cut the tips and carefully clean
them, making open them with a slight beat downwards. Then remove the central thorns and the inflorescence.
Let marinate them for a while in water and lemon.
Afterwards, arrange them in a pan with plentiful oil, standing and side by side, putting on each artichoke some slice of garlic. Add over them a mixture of chopped parsley, breadcrumbs, salt and pepper.
In the course of cooking, after the initial browning, add a few water as far as reaching half of the artichoke.
Continue the simmering, wetting them with their sauce every so often and regulate the salt and pepper.
At complete cooking, serve hot the artichokes with some croutons.
